The Mexican specialty Huitlacoche / Cuitlacoche is a corn fungus, therefore also called corn truffle. It forms on Mexican corn during the rainy season in Mexico. And now follows the text version of the recipe for Mexican Quesadillas de Huitlacoche.

Ingredients

 

  • 1/2 Onion finely chopped
  • 1 Garlic clove finely chopped
  • 1 tablespoon chopped epazote or 1/2 tablespoon dried epazote from the store
  • 10 pieces shiitake mushrooms** (soaked in water at 90° for 20min.)

    *a little bit oil for frying and brushing 

     

    For garnish

     

    • Romaine lettuce cut into strips
    • Creme Fraiche
    • Grated feta cheese
    • Other utensils: one medium and one large Teflon pan, bowls for ingredients and for serving, cooking spoon and spatula.

      **Rarotonga used shiitake mushrooms to give more texture and also a pinch of sugar to soften a bitter note (which canned huitlacoche brings).

      Preparation of the Huitlacoche Mexican style Quesadillas

      Shiitake mushrooms after soaking in 90 degree water for 20 minutes, rinse with clean water and cut into thin strips.

      1. First heat pan over medium heat, add a teaspoon of oil and then the chopped onion. Sauté until translucent.

      2. Then add chopped garlic, stir. Then add shiitake mushrooms. Stir constantly.

      3. After about 1 minute, add epazote and salt.

      4. After a few minutes, add the Mexican huitlacoche / cuitlacoche and continue to stir. Fry together in the pan for a few minutes until the moisture is low.

      5. Place 2 tortillas side by side in a large skillet over low to medium heat and spread half of the tortillas with the huitlacoche mixture and fold in half.

      6. Then brush with a little oil. With a spatula, turn the tortillas / quesadillas and coat the other side as well.

      7. Fry over low heat and turn over again. Allow to turn golden brown. Remove when quesadillas steam from center. Place in a bowl.

      8. When serving, open the huitlacoche quesadilla, add some creme fraiche, grated cheese, lettuce and 1-2 spoonfuls of green salsa.
