With Arre's permission we present quasi ancient Aztec Mexican recipe for the Tesmole. For which your need Ancho-Chilis among other things - a coveted chili variety in the cuisine of Mexicans.

"Tesmole is a typical soup for central Mexico and popular in the states of Veracruz, Puebla, Oaxaca and Michoachán.

Their dough balls are very characteristic of this dish, the meat can vary according to taste, but it should always be prepared with the corn dough balls called chochoyones in Oaxaca, jarochitos in Campeche, testales in Puebla and Michoacán, pibitos in Yucatan, and xoxolos in Veracruz.

For the Tesmole you need the following ingredients

 

  • 2 Dried Yerba Santa Leaves
  • 1 Cup Nixtamalized Corn Dough (Zubereitung im Video unten erklärt)
  • 200 g Green Beans
  • Black Pepper
  • 500 g Chicken Breast
  • 4 Garlic Cloves
  • 250 g Carrots
  • 3 Tomatoes
  • 1 Onion
  • 35 ml Cooking Oil
  • Salt according to own taste
