**Rarotonga used shiitake mushrooms to give more texture and also a pinch of sugar to soften a bitter note (which canned huitlacoche brings).
Preparation of the Huitlacoche Mexican style Quesadillas
Shiitake mushrooms after soaking in 90 degree water for 20 minutes, rinse with clean water and cut into thin strips.
First heat pan over medium heat, add a teaspoon of oil and then the chopped onion. Sauté until translucent.
Then add chopped garlic, stir. Then add shiitake mushrooms. Stir constantly.
After about 1 minute, add epazote and salt.
After a few minutes, add the Mexican huitlacoche / cuitlacoche and continue to stir. Fry together in the pan for a few minutes until the moisture is low.
Place 2 tortillas side by side in a large skillet over low to medium heat and spread half of the tortillas with the huitlacoche mixture and fold in half.
Then brush with a little oil. With a spatula, turn the tortillas / quesadillas and coat the other side as well.
Fry over low heat and turn over again. Allow to turn golden brown. Remove when quesadillas steam from center. Place in a bowl.
When serving, open the huitlacoche quesadilla, add some creme fraiche, grated cheese, lettuce and 1-2 spoonfuls of green salsa.
You can also use other sauces, it's up to your taste. Here you will find the selection of Mexican salsas from our online store MexicoMiAmor.de.
