This dish has many delicious variations in Mexican cuisine and it is also an idea for a children's meal. We are very happy about a new cooperation with the Instagram profile of the always curious Mexicana en Alemania, from whom we may present you for the first time at MexicoMiAmor.de a recipe that is suitable for vegetarians and was passed on to her by her mother. It is also suitable for children to eat.
We present you the video reel of the Mexican entomatadas with tomatoes (as the name says in Spanish), cumin, coriander and cheese right here. Further down you will find the steps again in text form.
And now here are the ingredients and preparation in the text version of the recipe.
Zutaten
- Freshly made cornmeal tortillas (Rezeptvideo hier) or ready corn masamor tortillas from the store
- 5 tomatos 🍅
- A small piece of onion
- 2 garlic cloves
- 1 Paket bean puree
- 1/3 bunch cilantro
- 2 packets of shepherd's cheese (if you are in Germany), or panela
- Öl
- Salt & Pepper
- Optional: carrots & potatoes as a side dish
Preparation of the entomatadas Mexican style
Cook the tomatoes, garlic and onion in boiling water.
-
After cooking, mix the tomatoes, garlic and onion pieces with salt and pepper.
-
After mixing, add to the pan with a little vegetable oil until slightly thickened.
-
When the stove is off, add the finely chopped cilantro and set aside.
-
Heat the tortillas with a little oil and dip them in the tomato sauce, fill them with the cheese crumbled with your fingers and roll up the tortilla.
-
When you have formed all the entomatadas, add more sauce and cheese and decorate them with red onion slices - done ✅️.
-
Note: You can still serve very well bean puree to it. Simply warm it in a pot, fry carrots and potato cubes in a pan and eat it as a side dish.
Bon appetit!
