Ancho chilies are the dried version of the poblano chili pepper, which originated in Puebla, Mexico. Ancho chili has a strong, smoky flavor reminiscent of mild notes of chili with a gentle, sweet heat. Ancho chile is a very noble and versatile ingredient that enhances many Mexican dishes. It can be mixed dried or rehydrated by adding boiling water after removing the chile from its stem and seeds.
