Piloncillo is a traditional cane sugar and therefore, above all, a very pure sweetener from Latin America, made from the thickened juice of the sugar cane, which has then been pressed into a solid mass. Piloncillo is often sold as in this case 100% natural and in the form of small cone-shaped blocks.

The taste of Piloncillo is rich and caramel, similar to brown sugar. However, with a slight malt note. Piloncillo is popular in Mexican cuisine, especially in desserts, sweets and drinks such as atole or champurrado. Recipe

Recipe for sweet piloncillo rolls

INGREDIENTS
4 1/2 cups flour
330 g piloncillo (or 1 1/3 cups dark brown sugar and 1 1/3 tablespoons molasses)
2 tablespoons baking powder
Cinnamon (in pieces)
salt
115 g lard (melted and cooled)
2 eggs
0.25 liters of milk

PREPARATION
1. preheat the oven to 180 degrees Celsius.

2. put flour, piloncillo, baking powder, cinnamon and a pinch of salt in a bowl. Stir.

3. add lard, eggs and milk. Mix with a wooden spoon.

4. place the dough on a flat surface and knead. Add flour as needed.

5. divide into portions and form the rolls into small dumplings 1 cm thick.
Place on a baking sheet.

6. Bake for 20 to 30 minutes, until bottoms are golden brown.

Tips

Store in a dry place. After opening like to wrap in something or put in a closed container. The product is then usually edible well beyond the indicated year.
