As a distillate made from agave, mezcal differs from tequila in that it uses other types of agave, particularly the espadin agave, and it is particularly common in Oaxaca.

In mezcals such as the Gusano Rojo, you can even find a real maguey worm, which gives the drink additional nuances - an authentic touch for connoisseurs. There are two types of agave worms that live in the plants: the red ones, which live in the roots, and the white ones, which burrow into the leaves. The maguey worm, which is actually a moth caterpillar, contributes to the taste of the mezcal and is harmless. Gusano Rojo Mezcal, named after the red worm, is a well-known brand that has been producing high-quality mezcal for 90 years.

This mezcal is made from 100% agave, whereby the agaves reach an age of 8 to 10 years for the harvest. The production process involves cooking the agave pieces in a conical stone oven with mesquite wood, which enhances the smoky flavor. Fermentation takes between 6 and 12 days, depending on weather conditions, and distillation takes place twice in copper stills heated with mesquite wood. Gusano Rojo Mezcal is produced in Santiago de Matatlan and offers an earthy, subtle taste with nuances of peanuts and ripe agave, accompanied by smoky and spicy aromas such as white pepper and pine forest.
