Morita chilies are dried and smoked jalapeño chilies and one of the most commonly used chipotle chili types. Chile Morita is usually smoked for only half as long as a regular chipotle chile, resulting in a softer and fruitier chile variety. The chilies are used to make a variety of salsas. Chipotle can be ground and combined with other spices to make a meat marinade - adobo. Chipotle is used, usually in powder form, as an ingredient in both homemade and commercial products, including some brands of barbecue sauce and hot sauce, as well as in some chilies and stews. Recipe

Fresh chipotle salsa

- 2 pounds tomatoes, coarsely chopped
- 1 ½ peeled onions cut into ½-inch slices
- 1 clove garlic
- 15 El Molcajete brand chipotle chilies
- 3 Tbs. olive oil
- ½ cup lime juice

1. toast the chiles, clean them, and soak them again to soak them up

2. roast the garlic and onion in the same pan as the chiles

3. place all ingredients in a blender and pulse until desired consistency is reached.

You may need to add some of the soaking water from the chilies to blend them properly.

Heat a pan, add the pureed mixture to the hot pan and cook for 5 to 10 minutes.

Let cool and serve, for example with chicken or pork.

Store in a cool and dry place without direct sunlight.
