Chipotle chilies are red jalapeño chilies that have undergone a drying and smoking process. However, Meco chilies remain on the bush and are not harvested until they have lost their moisture. By harvesting when it is naturally dried the pod takes on a warm, brown-gray color and a stiff exterior. This process allows a much more intense and powerful flavor that goes perfectly with red meat and red wine, perfect for intense barbecues.
