These Maíz & Co. Tortillas Azul are made from blue criollo maize. Origin and history: Criollo maize comes from the original maize populations in Latin America and has a long history dating back to the indigenous cultures of the region. It has been traditionally cultivated for generations, has a high biodiversity (many varieties and colors) and is praised for its excellent taste and pleasant texture, as well as a tender consistency that lends itself well to the preparation of traditional corn products such as tortillas, tamales and masa.

Initially, light tortillas were made by Mexicans in Germany (all tortilla products in our store are made in Europe). Maíz & Co. also focuses on maximum transparency and produces live in front of interested visitors in a visible production facility - their showroom. There, the process of the thousand-year-old manufacturing tradition is openly made into a principle for customers.

Of course, we tried them ourselves and the tortillas are just as soft as those made from light corn, which we would like to emphasize.

In addition, it is rare for blue corn tortillas to be able to be stored without refrigeration. These tortillas can be stored dry and do not require refrigeration. They can also be frozen for a longer shelf life. However, the shelf life is generally only around 10 weeks from production. An extremely long best-before date is therefore not possible.

Shipping and delivery time

In Germany approx. 1-3 working days, to other EU countries approx. 3-7 days delivery time. Products stored in refrigerator or freezer temperatures are shipped only from Monday to Thursday or max. two days before weekends extended by holidays. Recipe

1. place the tortillas in a hot pan, heat them for 5-10 seconds on each side and turn them over 2-4 times.

2. they are ready for you to eat when they become soft and flexible or puff up slightly.

3. place the tortillas in a folded clean towel/dishcloth/fabric towel/tortillero or a closed container to keep them warm.

4. during your meal, remove the tortillas one by one and top with your meat/meat substitute, vegetables and add salsa/sauce or other ingredients. Enjoy your meal!

Tips

Before eating, heat for approx. 30-40 seconds, always approx. 10-15 seconds per side, well suited in a flat pan or comal (also available here in the store) and top the tortillas as desired.

To avoid constantly running back and forth between the pan and the dining table, tortilla warming bags (tortilleros, also available here in the store) are suitable.

Once opened, eat within 3 days. If necessary, wrap in a kitchen towel and store in the fridge to prevent them from drying out.
