Albondigas (meatballs) a la Parrilla

Are you ready for the ultimate meatball experience? HERDEZ® Albondigas a la Parrilla bring home the classic Mexican flavor of HERDEZ® Salsa Casera and are enhanced with HERDEZ® Guacamole Salsa.

Ingredients
- 1 pound ground beef
- ½ cup bread crumbs
- 2 eggs, lightly beaten
- 3 Tablespoons chopped fresh parsley, divided
- 2 teaspoons salt
- ½ teaspoon pepper
- 1 teaspoon olive oil
- 1 cup HERDEZ® Salsa Casera or HERDEZ® Salsa Verde
- 1 cup HERDEZ® Guacamole Salsa

Preparation
In a large bowl, mix together ground beef, bread crumbs, eggs, 2 tablespoons parsley, salt and pepper.

2. Form into 30 (1-inch) meatballs. Refrigerate for 1 hour.

3. preheat grill to 175° C.

4. brush cooled meatballs with olive oil.

5. grill, covered, 13 to 15 minutes, turning occasionally, or until cooked through.

6. In a medium saucepan over medium heat, combine meatballs and salsa casera or verde.

7. bring to a simmer.

8. serve warm. Garnish with remaining parsley and guacamole salsa and serve for dipping.

Once opened, store in the refrigerator, until then can be kept at room temperature.
