How do chicken, rice, chocolate and various chili peppers go together? In this case, it all combines for sure to a treat. You can also add avocado and Corn Tortillas to make this a dream of Mexican cuisine and a successful recipe.
For the sauce whose recipe is presented here are many ingredients and a long process necessary. Good that there is the so-called Mole is also already available in different delicious types and brands ready with us in the store. So you only have to add some broth and everything goes more quickly.

Ingredients
- 500 g chicken drumsticks (traditional) or chicken breast
- 1,5 l water
- 4 garlic cloves
- 1 bay / laurel leaf
- 1 onion (halved)
- 1 tsp chicken broth, grained
- 2 Guajillo Chilis
- 2 Pasilla Chilis
- 2 Ancho Chilis
- 1 tomato
- 40 g dark chocolate
- ¼ cinnamon stick
- 2 tsp sesame seeds, light
- 1 clove / carnation (flower)
- ¼ tsp cumin / comino
- ¼ tsp nutmeg
- 3 allspice / piment
- ½ tsp coriander seeds
- 2 tsp peanut butter
- oil to taste
- salt and pepper to taste
- Optional: sauce thickener or starch for thickening
Preparation of the Mole Poblano

In a pot, bring 1.5 liters of water to a boil. Add half an onion, 2 cloves of garlic, a bay leaf and the chicken legs or breast to the water. Simmer together for about 30 minutes, until the chicken is tender. Remove the chicken legs or breasts and set aside. Using two forks, shred the chicken breasts.

Clean and seed the chilies with a paper towel. Add the chocolate to the broth (remove the chicken first).

Heat a frying pan (medium heat). Roast sesame seeds in it without oil. Once the grains get a light golden brown color, put the sesame seeds in a blender. Repeat this process with the remaining spices (allspice, cumin, cinnamon, clove and nutmeg).

Add a little oil to the pan and now fry all the chilies in it from both sides. Then add the chilies to the broth.

Now lightly fry half the onion, 2 cloves of garlic also and add to the blender. Repeat the process with the tomato and add to the blender. Add the chilies to the blender as well, add some more broth and blend.

Heat a little oil in a large pot. Pour the sauce from the blender into the pot. If you like, you can pass the sauce through a sieve beforehand. This step is optional. Add the rest of the chicken stock. Let it simmer for about 15 minutes. If necessary, thicken the sauce with sauce thickener or a little starch dissolved in water. Add the chicken to the pot, heat briefly and season with salt and pepper. Garnish with sesame seeds. Serve with rice, tortilla and avocado, for example.
