Ingredients (quantity according to own needs)
- 2 Vegetable onions, cut into strips
- 1 Chicken breast (approx. 200g per person)
- 1 tea spoon Olive oil
- Spices of choice such as salt, bell pepper, paprika powder, Cumin (Comino)
- 2 tea spoons Chipotle en Adobo
- 1 Can of chunky tomatoes
- Corn Tortillas 12-15cm
Preparation of Chicken Chipotle Tacos
Here's what each step in the cooking process looks like for you.
Heat oil in a pan and fry chicken breast in this with onion strips until crispy and season everything well.
Add tomato sauce and season everything again with spices and simmer on medium for about 35 minutes. Remove chicken and pick apart with the help of two forks to make Pulled Chicken. Add Pulled Chicken back into the sauce and mix everything together well.
Heat tortillas in a skillet until grease-free and serve garnished with chicken filling and additional toppings/salsas, if desired.
