The dried form of the poblano chili is one of the most commonly used dried chilies in Mexico. The chili pepper is dark red in color and between 12 and 15 centimeters long. Although it is very similar to the Mulato chili pepper, it has a flavor with different nuances. The degree of spiciness varies greatly, ranging from quite strong to slightly hot.
The ancho chili is used in countless stews and is often combined with other dried chiles such as mulato and pasilla to make moles and marinades. In some cases it is also used to prepare chilis rellenos. A sought-after spice in Mexican cuisine.
