The Peruvian Aji Amarillo peppers are available from us as whole chili peppers in 500g bags from the freezer section at a great price. They are an important ingredient in Peruvian cuisine, but also taste great in Mexican dishes. Although the name of the chili suggests “yellow,” it is often more of a bright orange color.

Their unique flavor profile offers medium heat with surprisingly fruity, lemony aromas. The approximately 4-inch-long Aji Amarillo pods are a culinary delight with a heat level of 30,000–50,000 Scoville units. They are spicy, but there are chilies with more heat, and you can adjust the amount to suit your taste.

Traditional Peruvian dishes for these chilies include ají de gallina (chicken stew), causa rellena (stuffed potato dish), and papa a la huancaina. But you can use these fresh pods in many different ways, for example in fruity salsas, spicy marinades, creamy soups, various rice and noodle dishes, or as a base for chili pastes.
