Sopes are small round corn dough bowls that can be garnished with various delicious toppings. They are somewhat similar like tortillas, but a bit thicker and have a molded edge toward the top, like small cakes. This recipe is in the upper scale of effort category in terms of its preparation time.

They are usually topped with tasty toppings such as meat, beans, cheese and fresh vegetables and rounded off with a spicy salsa. There are no limits to what you can do with Sopes, you can add other ingredients to them as you like and they also make a great vegetarian version.

  • 200ml handwarem water
  • 1 can Bohnen (like you want, without sugar)
  • 1/4 diced onion
  • 1/2 garlic clove (finely chopped)
  • 3 chorizos (extra spicy) like for barbecue

Preparation of the Sopes con Chorizo y Salsa de Morita

  1. Stir the corn flour and water until smooth. Roll small thick balls with both palms.

  2. Now press the dough with the tortilla press to the desired shape. Sopes are usually smaller and a bit thicker than classic tortillas, don't press it completely flat, but to about the thickness/height of 3-4 millimeters when you place it next to the edge of the tortilla (or use the video to help you). Then bake the dough patties in a non-stick skillet over medium-high heat for a few minutes on both sides (bake one side for 20 seconds, flip again after 20 seconds, then let each side bake for another 1 minute each). Now remove the sopes and let cool slightly.

  3. Now press the edges of the sopes together a little with your thumb and forefinger at the edge so that there is a raised edge.

  4. In a pan with a little oil, sauté the onion cubes until they are translucent. Then add the chopped garlic and the beans and fry them briefly as well.

  5. Now mash the mix of beans, garlic and onions into a fine bean puree slowly with a masher until well pureed.

  6. Peel the outer skin off the chorizos, crumble the sausages by hand and fry until crisp.

  7. Now fry the sopes from the outside in a pan with a little olive oil until crispy.

  8. The sopes are now coated with a thick layer of bean paste and sprinkled with the crumbled cheese, followed by some chorizo.

  9. Now the sopes are fried again on low heat for about 10-12 minutes in the pan until the cheese is melted.

  10. Now the sopes can be served. For this, garnish the sopes with lettuce, avocado, onions and fresh vegetables, if desired, and round off with a good portion of salsa morita.
